The Count Down To The Holidays Is On!

This week we would like to take a moment and share a little holiday cheer, take a trip down memory lane & share a couple of savory hord’oeuve recipes with you all!

Since the grand opening of our new retail space in Oct, 2014, & all its adventures along the way, we would like to take a moment & reflect on the path that brought us at this point in time.

This endeavor which was a huge undertaking for Jeri Lynn, is truly a transformative project and nothing was about to get in the way of its completion.The design, scale, the scope of the project & the importance of this project is self evident.

To everyone who participated & all the hard work put into its finalization, a great big Thanks in making it materialize.

CCDC hopes to have bountiful years to come in this wonderful community & town of Roslyn.

Bruscetta Recipe:

This fresh & delicious finger food is a great accompaniment to any Holiday gathering.

INGREDIENTS:

6-8 Plum Tomatoes

3 Cloves Garlic-minced

Basil 8-10 leaves

3 Tbs-Olive Oil

Course Salt-to taste

Fresh ground Pepper-to taste

3 tsp-Balsamic Vinegar-

1 Loaf Rustic Italian Bread

Preheat broiler to high. Slice Bread into 1″ pieces and place on baking sheet.

Brush tops with Olive Oil & rub with clove of garlic. Broil 5 min. Keep an eye on it!

Dice Tomatoes, place in medium, serving bowl.

Add minced Garlic, thinly sliced Basil, and rest of ingredients. Gently toss to blend well.

Arrange toasted Bread around bowl of topping.

Enjoy!


Hot Spinach & Artichoke Dip Recipe:

Bruscetta

INGREDIENTS:

1 cup thawed, chopped frozen spinach
11/2 cups thawed, chopped frozen artichoke hearts
6 ounces cream cheese
1/4 cup sour cream
1/4 cup mayonnaise
1/3 cup grated Parmesan
1/2 teaspoon red pepper flakes
1/4 teaspoon salt
1/4 teaspoon garlic powder

DIRECTIONS:
Boil Spinach and Artichokes in 1 cup of water until tender and drain. Discard liquid. Heat Cream Cheese in microwave for 1 minute or until hot and soft. Stir in rest of ingredients and serve hot with Tortilla Chips, Bread or Veggies.

Feature Recipe: Displayed on Beatrice Ball Crocodile Platter

Sugar Free Ginger Bread Cake

Wet Ingredients:

2 cups unsweetened Apple Sauce

1/3 cup Canola Oil

3 Eggs

1-1/3 cups Molasses

MIX TILL BLENDED; SET ASIDE

Dry Ingredients:

3 cups Flour

1 cup Stevia Baking Blend

2 tsp. Baking Soda

1 tsp. Baking Powder

1/8 tsp. Salt

1 tsp. Cinnamon

1/2 tsp.Cloves

1-1/2 tsp. Allspice

MIX DRY INGREDIENTS & WET INGREDIENTS TO INCORPORATE WELL.

POUR INTO GREASED BUNDT OR OTHER.

BAKE 50 MIN. 350 DEGREES

Dress festively this holiday season without the traditional red & green.

Savor fall with this old family favorite recipe. Smooth, creamy & subtly sweet butternut squash soup. (as seen in Ceramic Turkey Terrine)

BUTTERNUT SQUASH SOUP

Ingredients:

1 butternut squash (2 lbs-chopped)

2 Tbs. sesame oil

2 tbs. olive oil

1 cup chopped onion

2-3 cloves garlic (chopped)

3/4 cup carrots (chopped)

1 Tbs. cumin (to taste)

1/2 tsp. salt to taste

Pepper to taste

1-1/2 containers Organics veggie broth (6 cups)

2 cubes Knorr veggie bouillon

1/4 cup heavy whipping cream

DIRECTIONS;

Cut the Squash in half and scoop out the seeds. Peel the Squash and cut into 1″ pieces.

In a large pot, heat oils on medium heat and add onion, garlic and saute till nicely brown. Add salt, pepper and cumin to taste and blend well. Add the carrot and squash and saute further till all incorporated. (about 5 min).

Add the veggie broth and bouillon cubes and stir well. Let simmer and cook 15 min or till veggies are tender.

Remove from heat  and puree the soup with an immersion blender or transfer soup to a food processor or blender.

Puree until smooth. Return to heat, add the cream and adjust the seasoning.

Artist Bio-

Susan Mulligan’s mixed media creations are an exploration in materials and technique; encaustic medium and oil paint are predominant. She then works in many layers, which may be the addition of pigment, found textiles and objects or subtraction by using a variety of tools to reveal the surface, accentuating texture, light quality and depth. Much of her nature series of work start with an archival photograph, taken by Susan, printed and mounted to panel.

Susan works in the present, reacting to the events of the process, to reveal representations of the natural world. she is greatly influenced by the Japanese aesthetic she experienced and during her study in Arita, Japan.-

Simplicity, harmony, naturalness, imperfection, and serene beauty.
