Savor fall with this old family favorite recipe. Smooth, creamy & subtly sweet butternut squash soup. (as seen in Ceramic Turkey Terrine)




1 butternut squash (2 lbs-chopped)

2 Tbs. sesame oil

2 tbs. olive oil

1 cup chopped onion

2-3 cloves garlic (chopped)

3/4 cup carrots (chopped)

1 Tbs. cumin (to taste)

1/2 tsp. salt to taste

Pepper to taste

1-1/2 containers Organics veggie broth (6 cups)

2 cubes Knorr veggie bouillon

1/4 cup heavy whipping cream


Cut the Squash in half and scoop out the seeds. Peel the Squash and cut into 1″ pieces.

In a large pot, heat oils on medium heat and add onion, garlic and saute till nicely brown. Add salt, pepper and cumin to taste and blend well. Add the carrot and squash and saute further till all incorporated. (about 5 min).

Add the veggie broth and bouillon cubes and stir well. Let simmer and cook 15 min or till veggies are tender.

Remove from heat  and puree the soup with an immersion blender or transfer soup to a food processor or blender.

Puree until smooth. Return to heat, add the cream and adjust the seasoning.

Artist Bio-

Susan Mulligan’s mixed media creations are an exploration in materials and technique; encaustic medium and oil paint are predominant. She then works in many layers, which may be the addition of pigment, found textiles and objects or subtraction by using a variety of tools to reveal the surface, accentuating texture, light quality and depth. Much of her nature series of work start with an archival photograph, taken by Susan, printed and mounted to panel.

Susan works in the present, reacting to the events of the process, to reveal representations of the natural world. she is greatly influenced by the Japanese aesthetic she experienced and during her study in Arita, Japan.-

Simplicity, harmony, naturalness, imperfection, and serene beauty.
